How to Make Chicken Tikka Masala
Marinade: overnight Preparation time: 5 minutes
Cooking time: 25 minutes
1. Marinade the chicken with the salt and lemon juice for 30 minutes.
2. Blend half the spices with the tomato puree and yogurt in a liquidiser. Cover the chicken with this and marinade overnight in the fridge.
3. Thread the chicken cubes onto skewers, leaving gaps for all round cooking; grill under a medium heat, turning continuously, until tender. Do not allow to dry out
4 .Fry garlic and onions in the oil until soft. Add remaining spices; stir fry for 1 minute. Add 120ml/4 fl oz of water and stir. Stir in cream
5 .Add chicken and cook for 10 minutes; add almonds and simmer for 5 minutes
6. Serve garnished with fresh chopped coriander
