Chiman’s Bean Curry


Using kidney or aduki beans, this tasty and nutritious dish incorporates tomatoes, celery and onions. Yummy with chunks of bread or rice. Suitable for Vegetarians and Vegans.

Bean Curry

Preparation time: 5 minutes
Cooking time: 5 minutes

  • 1 Chiman’s Bean Curry
  • 450g/1lb cooked kidney or aduki beans
  • 45ml/3tbsps vegetable oil
  • 2 medium onions
  • 4 cloves garlic, crushed
  • 400g/14oz can tomatoes
  • 2 sticks celery, chopped
  • Fresh coriander to garnish

1 .Warm the beans through in a pan
2. Heat the oil over gentle heat and fry onions until soft. Turn the heat to medium, add spices and garlic and fry for 1 minute, stirring constantly
3. Add the can of tomatoes and simmer for 2 minutes. Stir this paste and celery in with the warm beans. Serve garnished with fresh coriander.

Serve with Chiman’s Cauliflower & Spinach Bhaji, basmati rice and chapattis for a delicious vegan meal.
